Old vine Cabernet Franc that struggles to produce fruit ripe enough for red wine, but perfect for sparkling wine, is blended with Chardonnay and Molinara. The Cabernet Franc sees 6 hours of skin contact, lending this dry sparkler its rosy hue. Everything is blended together and bottled before fermentation is complete. Pair with watermelon, feta, and basil salad.
